Catalyst in condi can get "okay" sustain, but Weaver does it better atm in case of sustain I think. Vindicator and Virtuoso have least sustain of the e specs since battle scars and tormenting rune r nerfed. That would allow all existing weapons to work with it. Honestly they should tweak the ele elite so it changes all auras into that effect. This, replacing auras by the new orb mechanic would be a great way to make the elite specialization feel like something different. have the same feeling with the vindicator ability.
On the GM tier I think you have 2 good choices: Vicious Reprisal which is good for damage and generating Might (which can allow you to change Vindication with something else) and Steadfast Rejuvenation which heals you for quite a bit every second when you are using upkeep skills (Mallyx Elite, Jalis Hammers or Kalla Elite which already heals
Speaking only about raiding, mesmer is one of the strongest raid classes for both its elite specs. Chronomancer by far the highest power dps benchmark in the game, but isn't necessarily the best on a few raids. It also an incredible support outside of healing.
Personally, I love the simplicity of some of the Core weapons and specs, and think it would do wonders for build diversity for them to be brought up to par with some of the Elites. They don't have to be comparable, but it's pretty easy for Elites to get 50-100% more damage/heal/boon support than similar Core builds on the same class.
Tempest can provide alacrity and healing while catalyst can provide quickness, although they aren't commonly chosen over other classes which can provide these boons. Catalyst is also one of the best DPS specs. Both are also good for PvP, tempest as a healer and catalyst as a duelist.

It can be built from the ground up as a true support class. Its urns used as its identity to conjure aspects of Protection, healing and damage. They could take on that role without the need of an elite spec. Unlike Engineer who's healing ability has a few strange kinks ritualist can just be that from the start.

In terms of what's beginner-friendly, guardian, warrior and necromancer are all fairly tanky options that are straightforward to learn and, if you have the expansions, their HoT elite specs (dragonhunter, berserker and reaper respectively) are all considered to be good options as dps specs.
