1.Assasin , 2.dervish or 3.ranger for melee Or 1.Mesmer ,2.Elementalist ,3.ritualist and maybe necromancer. The most versatile by FAR are assassin ranger and Mesmer though . I do find the class lacking in solo farming builds, which is a part of PVE I highly enjoy. I only play around with the spirit spammer builds for UW solo farm and I used to run a 55 hp necro, I think, but otherwise there are limited options.
The thing about burst, is that you need to specify the timescale. One class will do best burst in 5 sconds fight, another will be the best in 15 seconds. Ideally you shoul look though graphs on benchmark logs and pick something that fits the encounters you are going to participate in.

Currently holosmith is the go-to choice for engi, having insane power dps in both sPvP and PvE. Holosmith is easily one of the best dps classes. Core engineer is not quite as good as it's elite counterpart, but then again anet wants you to buy their shit so no surprise there.
But when it comes to doing 5 man stuff you'll have your support covered. Necro+Mesmer. Mesmer because portals are always good in dungeons and such, and necro because it's by far the most capable "one man army" for any pve content. I had a blast doing dungeons and group events with a Reaper and Tempest duo.
P/P Deadeye, Shortbow Renegade, Scepter/Torch Scourge are all gods in solo play if built right. Scourge is probably the best, in trailblazer gear you can solo anything by facetanking it. Renegade is up there as well but has to kite some.. P/P deadeye is nice, its very mobile, heals itself, and gives itself boons.
Virtuoso (Mesmer): Simple to play and offers excellent DPS for new players and veterans alike. Reaper (Necromancer): Insane burst damage and ease of rotation, making it a top pick for AoE encounters. Soul-Beast (Ranger): Solid DPS, easy rotation, and range capability for flexible gameplay.

Hi! Welcome to GW2! First, this is not a "trinity" game. No threat mechanics means no way for tanks to control enemy behavior = no tanks. We have healing abilities and even specializations designed for healing roles, but none of it approaches the level of dedicated healers from a trinity game because this game is simply not designed to support that.
